Goodness Gracious, That's Great Goulash!

1/2lb elbow pasta, cooked to al dente (cup and a half)
1Tablespooon olive oil, once around the pan
1 lb ground beef
1 medium onion, chopped  (grated into the pan)
2 or 3 cloves garlic, minced
1 Tablespoon cumin, half a palmful
1 Tablespoon paprika, half a palmful
Salt, to taste
pepper, to taste
2 Tablespoons fresh chopped marjoram, a palmful (teaspoon of dry)
1 can (14 oz.) crushed tomatoes or chunky crushed tomatoes ( biggest can and added another can later as the pasta soaked it up)
4 oz.sour cream or reduced fat sour cream
Chopped fresh parsley, for garnish.
While the macaroni is cooking, heat a deep skillet to medium high. Brown ground meats in a little olive oil. Add onion to the pot, garlic and seasonings, cook another 5 minutes.
Mix in tomatoes, heat through, then stir in sour cream. Drain macaroni and add to pot, combining meat and macaroni. Garnish with parsley.

Blue Cheese and Walnut Salad with Maple Dressing Recipe

1 (10-ounce) sack baby spinach
1/3 pound blue cheese, crumbled
1 (6 ounce) can walnut halves, toasted
1/4 cup maple syrup, warmed
1 1/2 tablespoons cider vinegar
1/4 cup extra-virgin olive oil
Salt and pepper

Place spinach on a large platter. Top with blue cheese and walnuts. Warm maple syrup in a small saucepan. Pour vinegar into a small bowl. Whisk oil into vinegar in a slow stream. Whisk maple syrup into dressing in a slow stream. Pour dressing down over the salad platter and serve. Season with salt and pepper, to your taste.
(Very different but OH SO YUMMY!)
